Smoked Salmon Frittata

SMOKED SALMON FRITTATA

Have you heard? Breakfast is the most important meal of the day… and now it’s the most delicious! This Smoked Salmon Frittata is easy to make, and requires minimal ingredients and clean-up. Enjoy!

INGREDIENTS

  • ½ pound smoked salmon
  • 1 bunch scallions or green onions
  • ½ cup of grated parmesan cheese
  • 10 large eggs
  • 1 cup heavy cream
  • Salt and pepper to taste

DIRECTIONS 

  1. Preheat oven to 350 degrees F.
  2. Place an oven-safe skillet over medium-high heat, and add a dollop of olive oil. Once the pan is heated, add the smoked salmon.
  3. Finely chop the scallions, and add to the pan. Season with salt and pepper.
  4. Stir occasionally for 5 minutes.
  5. Meanwhile, whisk the eggs in a medium mixing bowl. Stir in the heavy cream and add the parmesan cheese.
  6. Pour the egg mixture into the pan with smoked salmon and scallions, and transfer to the oven.
  7. Bake for 5-10 minutes, or until the frittata sets and has a nice golden-brown colour.
  8. Remove from the oven, and loosen the sides of the frittata with a spatula. Slide onto a board and serve immediately! Enjoy!
