Lemon Garlic Shrimp Skewers

These easy-to-make garlicky shrimp skewers are the perfect addition to any healthy meal! Serve these skewers up on a bed of rice with fresh veggies and you’ve got yourself a dinner that’s equal parts delicious and nutritious!

Add olive oil, lemon juice, salt, pepper, oregano and garlic to a small bowl. Mix until well combined.
Place the shrimp on a small plate, and pour the marinade over the shrimp to coat evenly. Cover the shrimp and marinate for 30 minutes in the refrigerator.
Heat a grill to medium high heat. Meanwhile, place the shrimp onto skewers.
Add the skewers onto the grill and cook until shrimp are pink (about 2-3 minutes each side).
Sprinkle with parsley and serve with lemon wedges.
