Whether entertaining friends or enjoying a date night in, enjoy this easy, light shrimp pasta recipe on a hot summer night!
INGREDIENTS
- 14oz medium shrimp, peeled and deveined
- 3 tablespoons extra-virgin olive oil
- 4 cloves garlic, chopped
- 1 pint heirloom cherry tomatoes, halved
- 8 ounces whole grain angel-hair pasta
- 8 cups spinach
- ½ cup fresh basil, chopped
- Grated zest and juice of ½ lemon
- Salt and pepper; to taste
DIRECTIONS
- Bring a large pot of salted water to a boil, and add the whole grain pasta. Cook according to the pasta’s instructions.
- Once the pasta has finished cooking, drain and rinse under cold water. Add the pasta to a large bowl, and set aside.
- Add olive oil to a skillet over medium-high heat.
- Meanwhile, add the shrimp to a medium bowl, and season with salt and pepper.
- Add the chopped garlic to the skillet and cook until golden.
- Add the shrimp and cook until pink.
- Add the tomatoes and spinach and cook for 2 minutes, or until slightly softened.
- Add the skillet contents to the bowl with the wholegrain pasta. Toss in lemon juice, zest and basil until well combined.
- Serve!
