Budget Bites: Grilled Salmon Fettuccini

You shouldn’t have to sacrifice on flavour when you’re on a budget. Eating on a budget can be equal parts delicious and nutritious! Case in point: this grilled salmon fettuccini with lemon and olive oil!

INGREDIENTS

  • 1 lb dry fettuccini
  • 1/4 cup extra virgin olive oil
  • 1 small onion; finely chopped
  • 3 cloves garlic; finely chopped
  • 2 tsp finely grated lemon zest (about 2 lemons)
  • 1/4 cup freshly squeezed lemon juice (about 2–3 lemons)
  • 1/2 cup finely grated parmesan cheese
  • Salt and pepper; to taste
  • 2 TB shredded fresh basil leaves
  • 4 salmon fillets; seasoned with salt and pepper

DIRECTIONS

  1. Bring a large pot of water to boil. Add fettuccini and cook until al dente.
  2. Drain pasta, and reserve 1 cup of cooking water.
  3. While pasta is boiling, add 1 tbsp of olive oil to a frying pan on medium high heat. Add salmon fillets to the pan. Cook for four minutes on each side. Remove from heat and set aside.
  4. In a heavy skillet, cook garlic on medium heat until golden (about 5 minutes)
  5. Add in zest, lemon juice, salt, pepper, and 1/2 cup reserved cooking water. Bring to a simmer.
  6. Toss pasta in sauce with basil until well coated.
  7. Sprinkle with parmesan cheese. Serve with salmon!
