Lemon Garlic Shrimp Skewers

LEMON GARLIC SHRIMP SKEWERS

Recipe By Seafood Crate

These easy-to-make garlicky shrimp skewers are the perfect addition to any healthy meal! Serve these skewers up on a bed of rice with fresh veggies and you’ve got yourself a dinner that’s equal parts delicious and nutritious!

INGREDIENTS

  • Shrimp (approx. 14 oz) peeled and deveined
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons minced garlic
  • 1 tablespoon chopped parsley
  • 1 tsp oregano
  • Salt and pepper; to taste
  • lemon wedges for serving

DIRECTIONS 

  1. Add olive oil, lemon juice, salt, pepper, oregano and garlic to a small bowl. Mix until well combined.
  2. Place the shrimp on a small plate, and pour the marinade over the shrimp to coat evenly. Cover the shrimp and marinate for 30 minutes in the refrigerator.
  3. Heat a grill to medium high heat. Meanwhile, place the shrimp onto skewers.
  4. Add the skewers onto the grill and cook until shrimp are pink (about 2-3 minutes each side).
  5. Sprinkle with parsley and serve with lemon wedges.
